Food processing is the most demanding cold storage environment we build for, and the reason is not temperature. It is water.
A processing room gets washed down daily with hot water, caustic chemicals, and pressure. Everything in that room has to survive that cycle indefinitely: the wall surface, the panel joints, the door hardware, the cove at the base of the wall, and every penetration where a line passes through. Anything that absorbs water, holds water, or lets water behind it becomes a problem an auditor will find.
This is where sealant-free coving matters more than anywhere else on our site. Silicone cove joints in a washdown room fail on a schedule — they crack, they lift at the edges, they discolor, and each of those is a harborage point in a room where harborage points are the whole audit. A mechanically formed cove with no bead has nothing to fail.
The other constraints are structural and regulatory. USDA-inspected facilities have requirements that shape the room before aesthetics get a say. Temperature zones differ between kill floor, cutting, chilling, and frozen storage, and each has its own door traffic. Freezers on grade need floor protection, because a heaved slab in a processing plant is not a repair you can do over a weekend.
